Kickstart your day with this high energy recipe. A perfect blend of fiber and protein, my version of Baked beans with a Punjabi twist ..Rajma & Egg Toast recipe powered by Nutralite makes it rich in omega 3 and contains 0% cholesterol making it tasty and healthy too.
Salt to taste
Black pepper to taste
4-6 slices of multigrain bread
2 tbsp. Nutralite Garlic and Oregano
Coriander leaves (for garnish)
Soak rajma overnight and cook in pressure cooker for approx. 6 whistles and keep aside or use the leftover rajma directly.
In a pan, over the medium heat, add oil, jeera, ajwain, onion and sauté until onion is slightly brown.
Add ginger garlic paste and mix.
Then, add the tomato and let it cook for 5 minutes.
Once tomato is cooked, add rajma masala and mix.
Add cooked rajma, paprika, tomato ketchup, jaggery sugar, salt, black pepper and mix well.
Cover it with a lid and keep aside.
For Scrambled egg:
In a bowl, take eggs, half cup of almond milk and whisk well.
In a pan, over the medium flame, once hot add the Nutralite.
Then, add the egg mixture and stir continuously.
Do not overcook the eggs, once the mixture starts coming together, mix well and turn the gas off.
Add salt and pepper and mix.
For the toast
In a serving plate, take a slice of multigrain bread, spread Nutralite Garlic and Oregano.
Add a layer of rajma mixture over the bread.
Then, add a layer of scrambled egg mixture over the rajma mixture.
Garnish with coriander leaves and serve hot.
