Recipe for my Delicious Vegan Sandwich
Add the following to a bowl and mix. Then let rest for 10 to 15 minutes
2 Cups of Veggie, Chicken, or Beef Broth
1/2 Cup Ketchup
2 TBs Bragg’s Liquid Aminos, Tamari or Soy Sauce
2 Cups Textured Vegetable Protein
Now mix in the following ingredients and stir until completely mixed
1 Cup Quick Oats
1/3 Cup Minced Onions
1/3 Cup Minced Carrots
1/2 Cup Egg Beaters or Egg Substitute
1 TB Nutritional Yeast
Put the above in a 375 degree oven for 45 minutes. I used a 9 by 5 pan, but you could also refrigerate the above mix for 3 hours and then cook as meat balls.
The sandwich tastes best with either salsa, or tomato sauce. Here is my simple tomato sauce recipe.
1. Cook 2 cans of low sodium diced tomatoes until the liquid is almost gone ( 4 min. on High)
2. Add 1 8 oz. can of tomato sauce to thicken the sauce
3. Add 1/8 to 1/4 Cup of Pesto to taste
Then you can put it on any hoagie bun you’d like. I get a 130 calorie hoagie and take out the insides to lower the calorie count. If you cook the hoagie roll the right way, you’ll be able to do this and not miss the insides at all.
